Because her soup maker doesn’t work anymore, Girish rarely makes soups. But with a lot of carrots at home and her mom’s craving for soup, Girish decided to whip up some carrot soup with coconut cream.

Carrot soup with coconut cream

Soups are one of those dishes that take no time at all. You can just throw some cooked veggies in a blender. I used to have this really amazing soup maker where you could put the vegetable you wanted and turn it on. It would saute, steam, and blend the ingredients and it would be ready in no time. Because it doesn’t work anymore, I rarely make soups. Only because we had an abundance of carrots at home, and for some reason my mom was craving soup, I decided to make carrot soup with coconut cream.

Ingredients 

  • 1 large Onion
  • ½ stick Celery
  • 1 Bell Pepper 
  • A thumb-size of Ginger
  • 4 cloves of Garlic
  • 10 large Carrots
  • 1 large peeled Sweet Potato
  • ¼ cup Lentil
  • ½ tsp Turmeric Powder
  • Juice of 1 Lemon 
  • ½ cup Coconut cream 
  • Olive oil to saute
  • Salt and Pepper to taste

Directions 

  • Wash and soak lentil for ten minutes
  • Chop all vegetables into bite-size cubes
  • Sauté the onion ginger garlic celery in olive oil till the onions become translucent 
  • Add chopped potato, carrots, and lentil to the onions and saute for 5 minutes
  • Add salt and pepper to taste
  • In a pressure cooker pour add the sauteed veggies, two cups of water and the turmeric powder 
  • Cook for 10 mins till carrots and potatoes are soft to the touch
  • Transfer to a blender and blend to a soft paste
  • Add the juice of one lemon and  the coconut cream 
  • Blend one more time and serve hot
