Girish’s mom was inspired by Julie from the movie Julie and Julia’s tomato bruschetta to create egg bruschetta. For Girish, this meal is simple, yet satisfying, packed with protein, and can be prepared in no time.

Egg bruschetta

Bruschetta has always been a famous dish in my family. My mom watched the relentless efforts of Julie, from the movie Julie & Julia, a million times. Julie makes an original tomato bruschetta and inspired by that one scene, and fascinated by the “red plumpness” of the tomatoes, my mom started making bruschettas for us. Ever since, we have improvised and tweaked the dish to align with our taste buds. It is a simple, yet satisfying meal that is packed with protein and can be prepared in no time. 

Ingredients

  • Gluten-free bread of choice
  • 1 cup marinara sauce
  • 4 Brussels sprouts cut in half 
  • ½ Zucchini 
  • 4 Mushrooms
  • 4 hard-boiled eggs
  • 1 Onion
  • Cheddar or goat cheese

Directions

  • Chopp the brussels sprouts, zucchini, mushrooms and onion into tiny pieces.
  • Saute the onions until caramelized, add mushrooms, brussels sprouts, zucchini, and cook for a couple of minutues. 
  • Add the marinara sauce and cook for 5 minutes.
  • Toast the bread and spoon the mixture on, slice the eggs and add them to the top, finally grate some cheese on the top, and serve hot.
