
These stir-fried green beans are simple to make and they are packed with nutrition. Mixed with three different sauces, these beans make a delicious side to any Thai dish.
Ever since school started, the routine has kicked in and we were having the same kind of meals every day. Wanting something a little more exciting than rice and dal, I scurried through the kitchen and found all the ingredients for my moms’ massaman curry. After convincing my mom to make the curry, I started to wonder about having something extra on the side. I asked my mom if she could make stir-fried green beans and after getting a cold stare back, I decided to indulge in it myself.
Ingredients
1 lb green beans
4 cloves of garlic
2 tbs soy sauce
1 tbs Tamari sauce
1 tbs Stir Fry sauce
¼ tsp white pepper
½ cup of water
1 tsp sugar
A handful of crushed peanuts
1 tbs Oil
2 eggs
Directions
Finely mince the garlic and set aside
Combine all the sauces in a separate bowl.
Hard boil the eggs.
In a large saute pan add the oil and add the minced garlic.
Let the garlic cook for a couple of minutes and add your beans, add a splash of water to create steam. The steam will help cook the beans.
Add your sauce mixture, white pepper, and sugar.
Cook the beans, stirring frequently, for two minutes
Cut the eggs into four pieces, sprinkle with peanuts and serve.
