Scrambled eggs, fresh bread, and lots of cheese make the perfect breakfast. This breakfast bruschetta takes those ingredients and makes it a little more exciting. This recipe is so easy to make and the quantity is completely up to you. There isn’t a lot you have to cook for the recipe because you scramble the eggs, caramelize some onions and then just pile it all on some bread, it’s that simple.
Ingredients
Eggs
Butter
Choice of bread
Lettuce
Onion
Mushroom
Balsamic glaze
Avocado
Thousand Island dressing
Cheese of choice
Directions
Grease a pan and scramble the eggs
Chop the onions and mushrooms. Saute the onions until they are golden brown. Add the mushrooms and saute until the mushrooms are cooked.
Drizzle some balsamic vinegar or glaze on the mushrooms and mix.
Slightly toast your bread and place the lettuce on the slices.
Spoon the onion and mushroom mixture on the bread.
Add the scrambled eggs, avocados, dressing, and cheese.
