This plantain quesadilla is a simple, customizable recipe for a quick after-school snack.
This super simple recipe is perfect for a quick and delicious after-school snack. It is also highly customizable because you can use any tortillas and any cheese of your choice.
Ingredients:
2 plantain tortillas (I use these)
⅓ – ½ cup grated vegan mozzarella cheese (I use this one)
1 tsp paprika
¾ tsp chipotle powder
Sprinkle of dried basil and dried oregano
Black pepper and salt to taste
½ tbsp date sugar
Instructions:
Grate the mozzarella cheese and mix with the spices, salt, and date sugar
Warm up the tortillas on medium-high heat
Spread the cheese onto one tortilla and top it with the other tortilla
Cook on medium-high heat until both sides are browned
Cut and serve
