Inspired by the rich flavors of chocolate and almonds, these muffins are the perfect treat. I baked these muffins for a special friend’s birthday, and hope that you get the chance to bake them to enjoy with friends and family!
Ingredients:
Wet Ingredients:
⅓ + ⅙ cup water
⅙ cup melted coconut oil
1 tbsp vanilla extract
2 ripe bananas
Dry Ingredients:
Simple Mills Chocolate Cake Mix
Instructions:
Preheat the oven to 350 F.
Blend the wet ingredients using a stand blender or an immersion blender till smooth (I use an immersion blender).
Pour in the dry ingredients and whisk using an electric or manual whisk.
Place your muffin liners in the pan and pour in the batter (I like to use an ice cream scoop for this).
Place your muffin tray into the oven and bake for about 20-25 minutes or until fully cooked.
Cool completely or cool overnight.
