Baked sweet potato fries

You stroll through the town, red autumn leaves crunching under your feet, chilly gusts of wind brushing against your shoulders, and the smell of warm sweet potato pies filling your nose. As you walk further, you hear the giggles of little kids jumping into heaps of leaves. These images are what excite me for fall. But this isn’t all that fall offers, and with today’s recipe, you’ll get another reason to become excited for fall.

Orange sweet potatoes are a popular fall food and offer a variety of health benefits due to their high levels of Vitamin A, which is great for your eyes, and the presence of carotenoids, which help protect against cell damage.

Baked Sweet Potato Fries:

Ingredients:

  • 2 orange sweet potatoes (I often use white sweet potatoes for fries too, as shown in the photo)
  • 1 tbsp of oil (I use melted coconut oil)
  • Salt to taste
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp oregano
  • A pinch of dried thyme
  • 1 tsp dried basil

Directions:

  • Preheat the oven to 400 degrees Fahrenheit.
  • Peel and cut the sweet potatoes into fries
  • Toss the fries with the oil in a large bowl
  • Add all of the spices and toss again (Feel free to vary the amount of spices to personal preference)
  • Arrange the fries on a baking sheet apart from each other (try not to overlap!)
  • Bake for 10 min
  • Flip and bake again for 10 min or to desired texture
  • Cool and serve with ketchup or guacamole
