This veggie salad is the perfect meal for the warmer days ahead. Full of crunchy carrots and juicy cucumbers, it is both fresh and nutritious.

Ingredients:

  • 1 cucumber (sliced or spiralized)
  • 1 head lettuce (finely chopped)
  • 1 carrot (diced)
  • Juice of one lemon or one orange

Instructions:

  • Mix the ingredients in a large bowl 
  • Toss with lemon juice or orange juice
  • Enjoy!
