Vegan and gluten-free millet namkeen

Namkeen is a popular type of snack eaten in India. One type of namkeen, called murmura or purmul is made from spiced and roasted puffed rice and nuts. My recipe is inspired from purmul but makes it without rice by using puffed millet and takes out the nuts and uses seeds instead, making it very allergy-friendly. 

Ingredients:

  • ½ tbsp coconut oil
  • 2 cups puffed millet
  • 7-8 curry leaves
  • ½ tbsp rai (black mustard seeds)
  • ⅓ cup pumpkin seeds
  • Pinch of hing (asafoetida) 
  • Himalayan salt (to taste)
  • 1 – 1.5 tsp curry powder
  • 1 tsp coconut sugar
  • ½ tsp turmeric powder
  • ½ tsp kashmiri red chili powder

Instructions:

  • Heat a pan on medium-high heat
  • Add oil to the pan and let it melt
  • Add the rai (mustard seeds), curry leaves, hing (asafoetida), turmeric powder, red chili powder, curry powder to the oil
  • Add the pumpkin seeds and roast them on medium heat till aromatic
  • Add the puffed millet and salt and roast on low heat for 5-10 minutes
  • Turn the heat off and add the coconut sugar, and mix
