Pesto Finger Sandwiches

The fragrant flavors of the pesto paired with fresh vegetables and sharp cheddar cheese come together to make the perfect picnic sandwich. The highlight of this pesto is the toasted pine nuts. The pine nuts ensure that the pesto has a thick creamy consistency which makes it the perfect spread for sandwiches.  

Ingredients 

  • 2 cups fresh basil leaves
  • ½ cup toasted pine nuts
  • 2 cloves garlic 
  • ¼ cup olive oil
  • 1 tsp ground pepper
  • 1 tsp salt

Directions 

  • grind all the ingredients until you get a smooth paste 
  • spread your freshly made pesto on your bread of choice
  • layer with veggies and cheese for a quick and easy sandwich
