Homemade ice cream seems to be a healthier option in the eyes of Ashvita. In this week’s edition of Goodbye Gluten, Girish shares her take on vanilla banana ice cream.

Vanilla banana ice cream

I’ve never attempted to make ice cream at home the way regular ice cream is made. The whole point of making it at home was to cut down on the dairy, sugar, and the other not-so-healthy ingredients. But my favorite milkshake is a simple banana and vanilla one and to do those flavors justice it must be made with full fat whole milk. Having an ice cream maker at home, on a whim, I poured my milkshake into the churner. An hour later I had one of the best ice cream flavors ever. 

 

Ingredients 

  • 3 cups full fat whole milk
  • 1 cup brown sugar
  • 3 tbsp vanilla extract 
  • 1 banana puréed 
  • 2 tsp guar gum

Directions 

  • Blend all the ingredients and boil the mixture for 8-10 minutes to activate the guar gum.
  • Adding guar gum prevents the ice cream from crystallizing and keeps the mixture soft and fluffy 
  • Pour the mixture into your ice cream machine and churn for 1 hour.
