Fried avocado tacos
These avocados have a crispy seasoned shell and are rich and soft on the inside. This recipe pairs very nicely with a traditional taco or can be used as a substitute for meat in wraps, sandwiches, and salads. They can also be enjoyed as a snack as themselves with a dipping sauce.
Ingredients
- 2 just-ripe avocados
- 2 cups bread crumbs
- Italian seasoning
- I large egg white
Directions
- Remove the seed from the avocados and peel the skin.
- Cut along them so you have small bite-size pieces
- Slightly toasted breadcrumbs work better and adds more crunch to your avocados.
- Combine the breadcrumbs and Italian seasoning or any other seasoning of choice
- Separate the white from the yolk and slightly whisk the egg whites to break up the protein
- Dip the avocado pieces into the egg white was and roll them in the breadcrumb mixture until evenly coated
- Bake the avocados in a 350°F oven for 15-18 minutes or until they start to brown
