Apple Clafoutis
My brother and I love to make this together in the fall when the apples are in season, so having a little helper to prepare the apples makes the whole process fun. This delicate desert is filled with fresh apples and the warm cinnamon flavors make this dish the perfect way to end your meal on a cold night.
Ingredients
- 4 medium apples, peeled, cored, and sliced
- 4 large eggs
- ¼ cup agave nectar
- ½ heavy cream
- ¼ salted butter melted
- 1 tsp vanilla extract
- ⅓ cup blanched almond flour
- ¼ tsp salt
- ½ tsp ground cinnamon
Directions
- Preheat oven to 350 ℉ and grease a 9-inch tart pan with grapeseed oil and dust with almond flour.
- Fan the apples in concentric circles on the bottom of the tart pan
- In a small bowl whisk together the eggs, agave nectar, cream, butter, and vanilla extract
- In a medium bowl combine the almond flour, salt, and cinnamon.
- Stir the wet ingredients into the dry ingredients and mix until thoroughly combined.
- Pour the mixture over the apples.
- Bake for 45-55 minutes, until the clafoutis is set in the center and the tip is golden.
- Cool for 30 minutes before serving.

Directions
- Blend all the ingredients in a blender until the mixture is smooth.
- If you are using an ice cream machine, pop the mixture in there, and in an hour you will have your ice cream.
- If you are not using an ice cream machine you can freeze the fruit beforehand and the blend to have your ice cream ready instantly.
