Green bean stir-fry
These stir-fried green beans are simple to make and they are packed with nutrition. Mixed with three different sauces, these beans make a delicious side to any Thai dish.
Ever since school started, the routine has kicked in and we were having the same kind of meals every day. Wanting something a little more exciting than rice and dal, I scurried through the kitchen and found all the ingredients for my moms’ massaman curry. After convincing my mom to make the curry, I started to wonder about having something extra on the side. I asked my mom if she could make stir-fried green beans and after getting a cold stare back, I decided to indulge in it myself.
Ingredients
1 lb green beans
4 cloves of garlic
2 tbs soy sauce
1 tbs Tamari sauce
1 tbs Stir Fry sauce
¼ tsp white pepper
½ cup of water
1 tsp sugar
A handful of crushed peanuts
1 tbs Oil
2 eggs
Directions
- Finely mince the garlic and set aside
- Combine all the sauces in a separate bowl.
- Hard boil the eggs.
- In a large saute pan add the oil and add the minced garlic.
- Let the garlic cook for a couple of minutes and add your beans, add a splash of water to create steam. The steam will help cook the beans.
- Add your sauce mixture, white pepper, and sugar.
- Cook the beans, stirring frequently, for two minutes
- Cut the eggs into four pieces, sprinkle with peanuts and serve.
