Embracing Mexican cuisine, Ashvita shares her recipe for pickled mangoes.

Spicy pickled mango

This is Mexican street food at its best. It is the perfect combination of sweet, salty, and smokey hot. Traditionally the mango is cut into strips around the seed to resemble a flower, where you bite off the petals, but in order to marinate and “pickle” them, they need to be removed from the seed.

Ingredients

  • 2 ripe Mangoes
  • 1 lime
  • Chilli powder to taste
  • Coriander powder to taste
  • 1 tsp Tajin seasoning
  • Chipotle Tabasco Sauce to taste
  • Salt

Directions

  • Peel the mangoes and, using a serrated knife, cut into the mango from the top until you reach the seed, and then bring the knife down to the bottom of the seed. Repeat until you have cut strips all around the fruit.
  • Combine the rest of the ingredients and toss them in the mangoes.
  • Serve fresh or let them marinate in an airtight container in the fridge overnight.
