In this week’s edition of Goodbye Gluten, Ashvita shares her recipe for lemon glazed cookies.

Glazed lemon cookies

Tart, yet delicate, these lemon glazed cookies are perfect for your evening tea. The cookie in itself is not very sweet so the tangy glaze perfectly compensates for the sweetness. I like a bite in my cookies so I add extra lemon zest to the glaze.

Ingredients

  • ½ cup butter
  • 1 cup granulated sugar
  • 1 tbsp packed light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1-2 tbs grated lemon zest
  • 2 cups gluten-free all-purpose flour
  • 1 tsp xanthan gum
  • ½ tsp baking powder
  • ½ tsp salt

Glaze

  • 1 cup powdered sugar
  • 1 tbs fresh lemon juice
  • 2 tsp grated lemon zest (optional)

Directions

  • Preheat the oven to 350°F and place a rack in the lower middle and upper-middle positions. 
  • Line two baking sheets with parchment paper
  • Beat the butter and sugar together until it is fluffy.
  • Beat in the egg, vanilla extract, and lemon zest.
  • In a separate bowl combine the gluten-free flour, xanthan gum, baking powder, and salt
  • Slowly add the dry ingredients to the wet.
  • With wet hands shape the dough into 24 equal-sized balls and place evenly on the baking sheets
  • Using your hands or the bottom of a glass press the balls into a disk and bake for 15-18 minutes.
  • To make the glaze combine the powdered sugar, lemon juice, and zest until smooth.
  • Once the cookies are cooled, drizzle the glaze over them.
