Plantain quesadilla
This super simple recipe is perfect for a quick and delicious after-school snack. It is also highly customizable because you can use any tortillas and any cheese of your choice.
Ingredients:
- 2 plantain tortillas (I use these)
- ⅓ – ½ cup grated vegan mozzarella cheese (I use this one)
- 1 tsp paprika
- ¾ tsp chipotle powder
- Sprinkle of dried basil and dried oregano
- Black pepper and salt to taste
- ½ tbsp date sugar
Instructions:
- Grate the mozzarella cheese and mix with the spices, salt, and date sugar
- Warm up the tortillas on medium-high heat
- Spread the cheese onto one tortilla and top it with the other tortilla
- Cook on medium-high heat until both sides are browned
- Cut and serve
