This plantain quesadilla is a simple, customizable recipe for a quick after-school snack.

Plantain quesadilla

This super simple recipe is perfect for a quick and delicious after-school snack. It is also highly customizable because you can use any tortillas and any cheese of your choice.

Ingredients:

  • 2 plantain tortillas (I use these)
  • ⅓ – ½ cup grated vegan mozzarella cheese (I use this one)
  • 1 tsp paprika
  • ¾ tsp chipotle powder
  • Sprinkle of dried basil and dried oregano
  • Black pepper and salt to taste
  • ½ tbsp date sugar

Instructions:

  • Grate the mozzarella cheese and mix with the spices, salt, and date sugar
  • Warm up the tortillas on medium-high heat
  • Spread the cheese onto one tortilla and top it with the other tortilla
  • Cook on medium-high heat until both sides are browned
  • Cut and serve
