Chocolate banana muffins
Inspired by the rich flavors of chocolate and almonds, these muffins are the perfect treat. I baked these muffins for a special friend’s birthday, and hope that you get the chance to bake them to enjoy with friends and family!
Ingredients:
Wet Ingredients:
- ⅓ + ⅙ cup water
- ⅙ cup melted coconut oil
- 1 tbsp vanilla extract
- 2 ripe bananas
Dry Ingredients:
Instructions:
- Preheat the oven to 350 F.
- Blend the wet ingredients using a stand blender or an immersion blender till smooth (I use an immersion blender).
- Pour in the dry ingredients and whisk using an electric or manual whisk.
- Place your muffin liners in the pan and pour in the batter (I like to use an ice cream scoop for this).
- Place your muffin tray into the oven and bake for about 20-25 minutes or until fully cooked.
- Cool completely or cool overnight.
- Enjoy!
